Does Deep Rybka 4 profit from hyperthreading, or does hyperthreading harm Rybka's performance?

It hurts performance unless you set affinities manually.

Even then, it doesn't seem to do much good, at least not on my Nehalems. Setting Max CPUs = 8 seems to be slightly faster than Max CPUs = 16 (default).

I don't know the technicalities, but as Sesse said, don't bother.
