I have a 64 bit single processor desktop running Windows XP and a 32 bit multi-processor laptop running Windows Vista. Is there any version of Rybka that I can purchase that I can install on both?
The main restriction is that a 64 bit engine won't run in a 32 bit Windows. Basically, you can run a mp capable engine on a single cpu (-core) system, and a single engine on one cpu core only, of a multiprocessor system. Both Rybka editions (single or mp) contain 32 AND 64 bit engine versions.
If you do not intend to buy another multi-processor PC soon, I would recommend the single version. Also, I would not be confident that a laptop is designed for LONG 100% cpu workload anyway... but I am not sure about that.
Rybka 3 will be released in a couple of month.

When you buy Rybka, whether it be the SP or MP version, you get both the 32-bit and 64-bit versions, so that's something to keep in mind.
